Strawberry & Champagne Bruschetta with Mascarpone

Strawberry & Champagne Bruschetta with Mascarpone

May 31, 2026

This bruschetta was built to pair with a strawberry mimosa, and it shows: the Champagne maceration in the strawberries mirrors the wine's floral notes, the fresh berry echoes the juice, and the lightly sweetened mascarpone echoes everything creamy and indulgent about a well-made sparkling drink. Each bite amplifies the next sip, and each sip makes the next bite taste more vivid.

They're also beautiful — jewel-red strawberries against cloud-white mascarpone — and they disappear from the platter faster than almost anything else. Plan accordingly.

Ingredients (makes 24 pieces): - 1 French baguette, sliced thin on the diagonal (24 slices) - 2 tablespoons extra virgin olive oil for brushing

Whipped Mascarpone: - 9 oz mascarpone, at room temperature - 3 tablespoons heavy cream - 1 tablespoon honey - 1 teaspoon vanilla bean paste - Pinch of salt

Champagne Strawberry Topping: - 14 oz fresh strawberries, hulled — half sliced, half quartered - 2 tablespoons granulated sugar - 3 tablespoons dry Champagne, Prosecco, or Cava - 1 tablespoon aged balsamic glaze - Fresh mint leaves, finely chiffonaded - Zest of 1 lemon

Champagne Strawberry Preparation: Combine sliced and quartered strawberries with sugar, Champagne, and lemon zest in a bowl. Stir gently to combine. Allow to macerate for 20–30 minutes at room temperature — the strawberries will release their juice and absorb the wine, intensifying in both flavor and color.

Whipped Mascarpone: Beat mascarpone and cream with a hand mixer or stand mixer fitted with the whisk attachment for 2–3 minutes until light, airy, and increased in volume. Add honey, vanilla, and salt. Beat 30 more seconds. It should be spreadable and slightly fluffy. Transfer to a piping bag. (Can be made 1 day ahead; refrigerate and re-whip briefly before use.)

Crostini: Brush baguette slices with olive oil. Bake at 400°F for 8–10 minutes until deeply golden and crisp throughout. Cool completely — they must be at room temperature and fully crisp before assembly.

Assembly: Pipe or spoon a generous mound of whipped mascarpone onto each crostino. Spoon the macerated strawberries on top, including a small amount of the Champagne-strawberry syrup. Drizzle a thin thread of aged balsamic glaze over each piece. Scatter a small pinch of mint chiffonade. Finish with lemon zest.

The Mimosa Pairing Logic: These crostini are designed to be consumed alongside a classic strawberry mimosa or rosé mimosa — the fresh strawberry and Champagne reduction in the topping directly mirrors the flavor of the drink. Each bite amplifies the next sip, and each sip makes the next bite taste more vivid.

Make-Ahead: Crostini (3 days ahead, stored airtight); mascarpone (1 day ahead, refrigerated); macerated strawberries (2 hours ahead maximum — beyond that, they become too soft). Assemble no more than 20 minutes before service.

Variations: Add a pinch of freshly cracked black pepper to the strawberries for a sophisticated variation. Replace mascarpone with fresh ricotta for a lighter, less rich version. Add a sliver of candied orange peel alongside the strawberry for an additional citrus dimension.

Pro Tips: The Champagne maceration is the detail that elevates this crostini from ordinary to extraordinary — the wine softens the strawberry's acidity while adding a floral, yeasty depth that plain sugared strawberries never achieve. Do not substitute sparkling water; the flavor contribution of wine is essential here.
