Smoked Trout Mousse on Cucumber Rounds

May 20, 2026
Smoked trout doesn't get the same attention as smoked salmon, but many chefs who use both prefer it — the flavor is sweeter, more delicate, and its clean finish pairs particularly well with champagne's minerality. As a mousse, whipped with cream cheese, dill, lemon, and horseradish, then lightened with folded cream, it produces something airy and elegant that the heavier richness of salmon mousse doesn't quite match.
Piped onto cool cucumber rounds, garnished with radish and micro dill — it's the most restrained and sophisticated bite on a mimosa pairing platter, and for certain guests, the favorite.
Ingredients (makes 36 rounds): - 3 large English cucumbers, sliced into ¾-inch rounds (approximately 36 rounds) - 9 oz hot-smoked trout fillets, skin removed, flaked (or cold-smoked trout if preferred) - 1 oz sliced radishes, thinly cut on a mandoline for garnish - Fresh dill fronds and micro herbs for garnish - Lemon zest for finishing - Flaky sea salt and cracked black pepper
Smoked Trout Mousse: - 7 oz full-fat cream cheese, at room temperature - 3 tablespoons heavy cream - 1½ tablespoons fresh lemon juice + zest of 1 lemon - 2 tablespoons fresh dill, very finely minced - 1 tablespoon fresh chives, finely snipped - 1 teaspoon fresh horseradish (grated) or ½ teaspoon prepared - 1 teaspoon capers, finely minced - ½ teaspoon Dijon mustard - Salt and white pepper to taste
Mousse Instructions: In a food processor, blend cream cheese until very smooth. Add flaked smoked trout and process until the mixture is relatively smooth but retains some texture — about 30 seconds. Add lemon juice, lemon zest, dill, chives, horseradish, capers, and Dijon mustard. Pulse until just combined. Season with salt and white pepper. Taste: it should be bright, smoky, and beautifully balanced between richness and freshness.
In a separate chilled bowl, whip the heavy cream to soft peaks. Gently fold the whipped cream into the trout mixture in two additions, preserving as much airiness as possible. Transfer to a piping bag fitted with a star or round tip. Refrigerate up to 24 hours.
Cucumber Preparation: Slice cucumbers into precise ¾-inch rounds with a sharp knife or mandoline. Pat each round thoroughly dry with paper towels — surface moisture prevents mousse adhesion and causes sliding. Keep refrigerated until assembly.
Assembly: Pipe a generous rosette of smoked trout mousse onto each cucumber round. Place one thin radish slice to the side of the mousse. Tuck a small dill frond against the mousse. Sprinkle a pinch of lemon zest over each piece. Finish with a single grain of flaky salt and a crack of black pepper.
The Mimosa Pairing Logic: Smoked fish and champagne is a pairing with deep classical roots — the wine's acidity cuts through the fat of the mousse while its bubbles cleanse the palate completely, making each bite taste as fresh as the first. These rounds pair with exceptional precision alongside citrus-forward mimosas: grapefruit rosemary, blood orange, and classic orange all work beautifully. The dill and lemon in the mousse mirror and amplify the citrus notes in the juice.

Make-Ahead: Mousse keeps refrigerated up to 24 hours in the piping bag. Cucumber rounds can be sliced and refrigerated 6 hours ahead (keep covered). Assemble no more than 1 hour before service — cucumber releases moisture over time.
Pro Tips: Hot-smoked trout (which is cooked through) and cold-smoked trout produce different textures in the mousse. Hot-smoked trout flakes easily and produces a mousse with more body; cold-smoked trout is silkier and more translucent, producing a more refined result. Both are excellent. Use whichever your fishmonger or specialty grocer carries at peak freshness.
