The Passion Fruit Vanilla Prosecco Mimosa

The Passion Fruit Vanilla Prosecco Mimosa

February 27, 2026

The Passion Fruit Vanilla Prosecco Mimosa is the tropical escape cocktail — a drink of vivid golden-orange intensity that transports guests to the tropics with the first sip. Passion fruit's extraordinary fragrance — one of the most complex natural aromas in the entire fruit kingdom, containing over 50 volatile aromatic compounds including esters, terpenes, and sulfur compounds that create its characteristic sharp-sweet tropical character — is softened and deepened by the addition of real vanilla bean, creating a drink that is simultaneously vivid and warm.

About Passion Fruit

The passion fruit (*Passiflora edulis*) is native to southern Brazil and is one of the most commercially important tropical fruits in the world. The purple-skinned variety (*P. edulis f. edulis*) has a more intense, aromatic flavor; the yellow-skinned variety (*P. edulis f. flavicarpa*) is larger and more acidic. Both produce extraordinary juice. Passion fruit season varies by hemisphere and growing region — Florida, Hawaii, California, and New Zealand all produce commercial crops at different times of year, making it available through most of the year at specialty stores. Goya Passion Fruit Pulp and Boiron Passion Fruit Purée (the professional catering standard) are the most reliable year-round options.

For cocktail use, Olivia's Cuisine's Passion Fruit Prosecco Mimosa is an excellent reference for the basic ratio. The addition of vanilla bean elevates this from a standard tropical mimosa to something of considerably greater sophistication.

Vanilla Bean Passion Fruit Purée: - 1 cup passion fruit pulp (from about 10–12 ripe passion fruits, halved and scooped — or Boiron/Goya passion fruit purée) - 1 vanilla bean, split and scraped - 1 tablespoon honey - 1 tablespoon fresh lime juice - ¼ cup water

If using fresh passion fruit: scoop pulp into a saucepan with vanilla bean, seeds, and pod, water, and honey. Simmer gently 5 minutes. Remove vanilla pod. Blend briefly. Strain through a coarse sieve (to remove seeds, retaining the flecks of vanilla). Add lime juice. Cool completely.

If using commercial purée: warm gently with vanilla bean (split and scraped) and honey for 5 minutes. Remove pod. Add lime juice. Strain. Cool.

Ingredients (serves 6): - 1 cup vanilla-infused passion fruit purée (above) - 1 bottle (25 oz chilled Prosecco Brut DOCG (La Marca, or Mionetto Prosecco Brut — Olivia's Cuisine uses Mionetto and recommends it specifically for passion fruit) - Halved fresh passion fruit and vanilla bean pieces for garnish - Optional: 1 oz Passoã passion fruit liqueur per serving for greater tropical intensity

Instructions: Chill Prosecco flutes for 5 minutes. Pour 1½ oz of vanilla passion fruit purée into each flute. Add Passoã if using. Top slowly with chilled Prosecco. The vivid golden-orange purée will bloom through the pale wine. Garnish with a halved passion fruit rested on the rim, seeds facing up to show the jewel-like interior, and a small piece of vanilla bean.

For a Mimosa Bar (serves 12): - 2 cups vanilla passion fruit purée - 3 oz Passoã (optional) - 2 bottles Prosecco Brut, chilled

Variations: - Replace vanilla with a half-teaspoon of coconut extract for a Passion Fruit Coconut Prosecco Mimosa with a more tropical character. - Add ½ oz of white rum (Bacardí Superior) per serving for a Passion Fruit Rum Prosecco Mimosa that references the classic passion fruit caipirinha. - Use sparkling rosé instead of Prosecco for a Passion Fruit Rosé Mimosa of deeper amber-pink color.

Pairing: Passion fruit's extraordinary fragrance and tropical sweetness make this mimosa exceptional alongside coconut-based preparations, tropical fruit platters, and light desserts. It is also an excellent partner for delicate fish — the fruit's acidity cuts through richness as effectively as citrus.

Pro Tips: Passion fruit seeds, while edible, create a crunchy texture in the glass that most guests find surprising and some find unpleasant. Straining through a coarse sieve removes the seeds while retaining the vanilla flecks, which are visually beautiful and flavourful. The vanilla bean should be used, not vanilla extract — the real bean's delicate floral warmth is what elevates this mimosa; extract has a sharper, more one-dimensional vanilla character.
