Luxurious Lobster Bisque

Luxurious Lobster Bisque

May 6, 2026

Lobster bisque is genuinely time-consuming to make well, and there's no shortcut worth taking. But the version you get at the end — silky, deep orange, intensely flavored, with a swirl of crème fraîche and a small pile of reserved lobster meat in the bowl — is the kind of thing people talk about afterward.

The whole strategy here is extracting maximum flavor from the shells. Roasting them before simmering adds a nutty, caramelized depth you cannot achieve any other way. Save this one for occasions that warrant the effort.

Ingredients (serves 8): - 2 whole lobsters (2–2½ lbs each) or 4 lobster tails - 4 tablespoons unsalted butter - 1 large onion, diced - 2 celery stalks, diced - 1 large carrot, diced - 4 garlic cloves, minced - 3 tablespoons tomato paste - 2 oz cognac or brandy - ¾ cup dry white wine - 6 cups seafood or fish stock - 1⅔ cups heavy cream - 1 teaspoon smoked paprika - ½ teaspoon cayenne - Fresh tarragon, bay leaf, thyme - Salt and white pepper - Crème fraîche and chives for garnish

Instructions: Steam lobsters until just cooked. Remove meat, reserve and chop. Break shells and roast at 400°F until deeply fragrant, about 15 minutes.

Sauté vegetables in butter until softened. Add tomato paste and cook 3 minutes. Add cognac and flame or reduce. Add wine, reduce by half. Add shells, stock, and herbs. Simmer 45 minutes. Strain, pressing hard. Add cream and spices, simmer 15 minutes until slightly thickened. Season carefully. Add reserved lobster meat.

Serve in warm bowls with a swirl of crème fraîche and fresh chives.

Pro Tips: Roasting the shells before simmering is the single step that separates good bisque from great — it develops a deep, nutty, caramelized flavor impossible to achieve otherwise.
