Lemon Ricotta Pancakes with Blueberries

Lemon Ricotta Pancakes with Blueberries

May 5, 2026

There's a version of pancakes you make on a Tuesday morning, and there's this. Lemon ricotta pancakes are the ones you make when you actually want people to say something when they eat them. The ricotta keeps them tender in a way that regular batter doesn't quite achieve, the lemon zest wakes everything up, and the blueberries give them that purple-bleeding-into-gold thing that looks exactly as good as it tastes.

The folded egg whites are the step most people skip. Don't skip them — they're the whole reason these are fluffy rather than just thick.

Ingredients (makes 12 pancakes): - 1 cup all-purpose flour - 2 teaspoons baking powder - ½ teaspoon salt - 3 tablespoons sugar - 1 cup whole-milk ricotta - 2 large eggs, separated - ¾ cup whole milk - Zest of 2 lemons - 2 tablespoons fresh lemon juice - 1 cup fresh blueberries - Butter for the pan

To Serve: - Warm maple syrup - Powdered sugar - Additional fresh blueberries - Lemon zest

Instructions: Whisk flour, baking powder, salt, and sugar. In a separate bowl, stir ricotta, egg yolks, milk, lemon zest, and lemon juice until combined. Fold wet into dry. In a clean bowl, beat egg whites to stiff peaks — fold gently into batter in two additions (this is the secret to the fluffiness). Fold in half the blueberries.

Cook in a buttered skillet over medium heat, about 2–3 minutes per side until golden. Serve stacked with remaining blueberries, powdered sugar, and maple syrup.

Pro Tips: Do not overmix after adding the flour — lumps are fine. The folded egg whites are crucial; skipping them results in dense pancakes. Keep finished pancakes warm in a 200°F oven while you cook the rest.
