French Onion Soup with Gruyère Crust

French Onion Soup with Gruyère Crust

May 27, 2026

French onion soup is one of those dishes where the effort goes almost entirely into a single step, and that step cannot be rushed. The onions need 45 minutes to an hour of slow, patient caramelization over low heat — stirring occasionally, not hovering — until they've collapsed to about a quarter of their original volume and turned a deep amber brown. That's where all the flavor comes from. Everything else is assembly.

The Gruyère and baguette cap that goes under the broiler at the end is theater as much as cooking, and it deserves to be taken seriously.

Ingredients (serves 8): - 3¼ lbs yellow onions, very thinly sliced - 4 tablespoons unsalted butter - 2 tablespoons olive oil - 1 teaspoon sugar - ¾ cup dry white wine - 6 cups good-quality beef stock - 2 tablespoons cognac or brandy - Fresh thyme, bay leaf - Salt and pepper

For the Gratin: - 8 thick slices baguette, toasted - 7 oz Gruyère, grated - 1 ¾ oz Parmesan, grated

Instructions: Melt butter and oil together in a large heavy pot over medium-low heat. Add onions and sugar. Cook, stirring occasionally, for 45–60 minutes until deeply golden and reduced to about a quarter of the original volume. Do not rush.

Add wine and reduce by half. Add stock, thyme, and bay leaf. Simmer 20 minutes. Add cognac and season well.

Ladle into oven-safe crocks. Float toasted baguette on top. Cover generously with Gruyère and Parmesan. Broil until cheese is bubbling and golden. Serve immediately.

Pro Tips: The quality of beef stock determines the quality of the soup. Homemade is ideal; Knorr or Kettle Brand cartons are acceptable substitutes. Never use powder or cubes.
