Cucumber Lime Mint Cooler Mocktail

Cucumber Lime Mint Cooler Mocktail

March 30, 2026

The Cucumber Lime Mint Cooler is the spa-treatment of zero-proof brunch drinks — a drink so genuinely refreshing that it makes every other beverage on the table seem slightly too rich, too sweet, or too warm. Fresh cucumber juice, crisp lime, and clean mint combine with sparkling water to produce a drink that is cooling, sophisticated, and unmistakably elegant. It is the non-alcoholic option that makes even committed drinkers pause and ask what it is.

This drink is inspired by the cucumber-mint water that you find in the lobbies of great hotels worldwide — the Aman, the Four Seasons, the Mandarin Oriental. Those infusions are so universal not because they are complicated but because they are perfect: the combination of cucumber's cool, watery flavor with mint's menthol and a touch of lime's acid creates a palate experience that is simultaneously refreshing, sophisticated, and calming.

About the Cucumber

English cucumbers (long, thin-skinned, seedless) produce the cleanest, most refined juice — their low seed count and thinner skin produce less bitterness than regular cucumbers. Persian cucumbers (shorter, firmer) are an excellent alternative. Regular American/garden cucumbers should be peeled and seeded before juicing to avoid excessive bitterness.

For maximum juice yield, juice cucumbers in a centrifugal juicer or blend and strain thoroughly. The resulting juice is pale green and almost water-clear — visually elegant in a champagne flute.

Ingredients (serves 6): - 2 large English cucumbers (about 1¼ lbs total), roughly cut - 3 tablespoons fresh lime juice (about 2–3 limes) - 1 tablespoon simple syrup or honey (optional — the cucumber is quite mild and may need a touch of sweetness) - 18 large fresh spearmint leaves, plus sprigs for garnish - 17 oz chilled sparkling water (Topo Chico is particularly good here — its fine, vigorous bubbles complement the delicacy of the cucumber) - Ice - Cucumber ribbons and lime wheels for garnish

For the Cucumber Juice: Blend cucumber pieces until smooth. Pass through a fine-mesh sieve, pressing firmly. The juice will be pale jade-green and very clean. Add lime juice and simple syrup if needed. Chill thoroughly — at least 1 hour. Best used within 6 hours of making (the color fades and flavor mellows over time).

Instructions: Chill champagne flutes for 5 minutes. Gently slap 3 mint leaves between your palms and drop into each flute. Pour about 2½ oz cucumber-lime juice over the mint. Top slowly with chilled sparkling water. The pale green juice and clear water create a subtle, translucent jade-colored drink. Use a vegetable peeler to cut a long cucumber ribbon; curl it and thread through a cocktail pick resting on the rim. Add a lime wheel and a mint sprig.

Batch (serves 14): - 4 cups cucumber juice with lime - Large fresh mint bouquet bruised and steeped in the pitcher for 30 minutes, then removed - 50 oz Topo Chico, added at service

Variations: - Add 1 tablespoon of elderflower cordial per serving for a Cucumber Elderflower Mint Cooler of additional floral elegance. - Replace mint with fresh dill for a Cucumber Dill Lime Cooler with a more savory, Scandinavian character — exceptional alongside smoked salmon. - Add 4–5 thin slices of fresh jalapeño to the batch for a Spicy Cucumber Lime Cooler with a gentle, slow heat.

Pairing: This is the zero-proof drink to serve alongside very delicate dishes — sashimi-grade fish, light salads, cucumber bites, and anything that should not be overwhelmed by a strong-flavored beverage. Its restraint is its power: it enhances rather than competes. Also exceptional as a palate cleanser between courses.

Pro Tips: The mint flavor fades quickly after contact with acid (the lime juice). For maximum mint impact, add the mint leaves directly to each individual glass at the time of service rather than steeping in the pitcher. Use spearmint rather than peppermint — peppermint's menthol content is much higher and can create a medicinal rather than refreshing result.
