Crudités Garden with Assorted Dips

March 20, 2026
A Crudités Garden station — vegetables arranged with botanical precision in a large vessel of crushed ice — is the most visually striking way to serve vegetables and dip. The "garden" concept elevates the familiar into something genuinely impressive: whole baby vegetables, unusual varieties, and thoughtful arrangement transform a standard buffet element into a conversation piece and a dietary-inclusive destination.
For 100 Guests — The Vegetables (select 10–12 varieties): - Baby heirloom carrots with tops intact (orange, purple, yellow, white) - Watermelon radishes, halved to reveal the magenta interior - Endive leaves (Belgian and radicchio), arranged as natural scoops - French breakfast radishes with greens attached - Broccolini florets, lightly blanched and refreshed - Asparagus spears, trimmed and lightly blanched - Sugar snap peas and snow peas - Fennel wedges, thinly shaved or in wedges - Heirloom cherry tomatoes on the vine - English cucumbers, cut into spears and rounds - Bell peppers (red, yellow, orange) sliced into elegant strips - Baby zucchini, halved lengthwise
The Dips (offer 4–5):
Classic Hummus: Blend 2 cans chickpeas, 3 ½ oz tahini, 4 tablespoons lemon juice, 2 garlic cloves, ¼ cup olive oil, salt. Finish with olive oil, smoked paprika, and toasted pine nuts.
Whipped Feta: Blend 10.6 oz feta, 3 ½ oz cream cheese, 3 tablespoons olive oil until smooth. Top with honey, red pepper flakes, and crushed pistachios.
Green Goddess: Blend 7 oz Greek yogurt, 1 avocado, large handful fresh herbs (basil, chives, tarragon, parsley), 2 tablespoons lemon juice, 1 garlic clove.
Roasted Red Pepper Romesco: Blend 2 roasted red peppers, 2 ⅞ oz blanched almonds, 2 garlic cloves, 2 tablespoons sherry vinegar, ¼ cup olive oil, 1 teaspoon smoked paprika.
Bagna Cauda (warm): Gently warm 6 tablespoons olive oil with 8 minced anchovy fillets and 4 minced garlic cloves for 10 minutes. Keep warm in a small fondue pot.
Display: Fill a large shallow container with crushed ice as base. Arrange tallest vegetables at back, layering outward. Position dip vessels at intervals throughout. Use fresh herbs and edible flowers as gap-fillers.
Pro Tips: Refresh ice every 45 minutes. Blanched vegetables should be thoroughly dried before display. Pre-cut vegetables the morning of the event, stored in ice water in the refrigerator, significantly reduces day-of preparation time.
