Classic Eggs Benedict

Classic Eggs Benedict

May 2, 2026

Eggs Benedict has a deserved reputation as the most impressive brunch dish to pull off at home — not because it's technically complicated, but because timing three components correctly at the same moment feels a bit like conducting. Get it right, though, and there's genuinely nothing better on a Sunday table.

The three things that actually matter: eggs as fresh as you can get them (fresh whites hold together properly during poaching instead of spreading across the water), a hollandaise made with patience and attention, and English muffins toasted until they're actually crisp — not just warm.

Ingredients (serves 4): - 8 large fresh eggs - 4 English muffins, split and toasted - 8 slices Canadian bacon or thick-cut ham - 2 tablespoons white wine vinegar - Chives and smoked paprika for garnish

Hollandaise Sauce: - 3 egg yolks - 1 tablespoon cold water - 1 cup (2 sticks) unsalted butter, clarified and warm - 1 tablespoon fresh lemon juice - Salt and white pepper to taste

Hollandaise Instructions: Whisk egg yolks and cold water in a double boiler over barely simmering water until thick and pale. Remove from heat. Very slowly drizzle in the warm clarified butter, whisking constantly. Add lemon juice, season, and keep warm over barely hot water.

Poaching Instructions: Bring a wide saucepan of water to a gentle simmer. Add white wine vinegar. Crack each egg into a small cup. Create a gentle swirl in the water and slide the egg in. Poach 3 minutes for a runny yolk. Remove with a slotted spoon and drain on paper towel.

Assembly: Toast the English muffins until golden. Layer with warmed Canadian bacon. Set poached eggs on top. Spoon hollandaise generously. Garnish with snipped chives and a dusting of smoked paprika. Serve immediately.

Pro Tips: The freshest eggs poach most cleanly — the whites hold together rather than spreading. A splash of white wine vinegar in the water helps the whites set faster. Make hollandaise last and keep it in a warm spot — it does not reheat well.
