Chocolate Fondant with Vanilla Bean Ice Cream

May 26, 2026
The molten chocolate fondant has been on restaurant menus for decades and guests still order it every time, which is either evidence of universal human psychology or just proof that warm chocolate flowing out of a shell onto a cold scoop of ice cream is one of the better eating experiences available.
Make it the day before — the batter refrigerates fine — and bake to order during a natural pause in the dinner. The timing window is narrow, so test one ramekin the day before to calibrate your specific oven.
Ingredients (serves 8): - 9 oz 70% dark chocolate, finely chopped - 9 tablespoons unsalted butter - 3 whole eggs + 3 egg yolks - 1¼ cups powdered sugar - ⅓ cup all-purpose flour - Pinch of salt - 1 teaspoon vanilla extract - Butter and cocoa powder for ramekins
To Serve: - Premium vanilla bean ice cream - Raspberry coulis or fresh raspberries - Powdered sugar for dusting
Instructions: Melt chocolate and butter together. Cool slightly. Whisk eggs, yolks, and powdered sugar vigorously for 2 minutes until slightly pale. Fold in chocolate mixture. Fold in flour, salt, and vanilla until just combined.
Butter ramekins thoroughly and dust with cocoa powder. Fill three-quarters full. At this point, refrigerate up to 24 hours.
Bake at 425°F for exactly 12–13 minutes (14 from cold). The edges must be set but the center still visibly jiggly. Invert immediately onto warm plates. Serve with vanilla bean ice cream.
Pro Tips: Test one ramekin the day before your event to calibrate your oven's exact timing. The difference between a perfect fondant and an overcooked one is literally 60–90 seconds.
