Breakfast Quesadilla Bites with Chorizo & Manchego

April 9, 2026
The breakfast quesadilla is the brunch bite that brings Mexican and Spanish flavors to the mimosa table. Spanish chorizo — the cured, dry sausage seasoned with smoked paprika — provides a smoky, savory depth that pairs beautifully with the nutty richness of aged Manchego cheese. Scrambled eggs, a touch of salsa verde, and fresh cilantro complete the picture.
The key distinction is Spanish chorizo versus Mexican chorizo: Spanish chorizo is cured and firm (like salami), while Mexican chorizo is raw and crumbly. For this preparation, Spanish chorizo is preferred — its firm texture slices cleanly and its smoky paprika flavor is more refined. Mexican chorizo can be used if cooked and crumbled first.
Ingredients (makes 24 bite-sized triangles): - 6 small flour tortillas (6-inch) - 5 ¼ oz Spanish chorizo (cured, firm variety — chorizo de Pamplona or similar), very finely diced - 7 oz aged Manchego cheese (DO, at least 6 months aged), finely grated - 6 large eggs - 2 tablespoons whole milk - 1 tablespoon unsalted butter - 1 tablespoon fresh cilantro, finely chopped - Flaky sea salt and cracked black pepper
Salsa Verde: - 3 ½ oz tomatillos, husked and quartered - 1 jalapeño, seeds removed - 1 garlic clove - ½ white onion, roughly chopped - 1 cup fresh cilantro leaves - 1 tablespoon fresh lime juice - ½ teaspoon ground cumin - Salt to taste
Garnish: - Fresh cilantro leaves - Lime wedges - Flaky sea salt - Cracked black pepper
Salsa Verde: Broil tomatillos, jalapeño, garlic, and onion on a foil-lined baking sheet for 8–10 minutes until charred in spots. Transfer to a blender with cilantro, lime juice, cumin, and salt. Blend until smooth. Taste and adjust seasoning. (Can be made 3 days ahead; refrigerate.)
Scrambled Eggs: Whisk eggs with milk and a pinch of salt. Melt butter in a non-stick skillet over medium-low heat. Add eggs and cook gently, stirring constantly with a silicone spatula, until just barely set — soft, creamy, and still slightly glossy. Remove from heat immediately. Fold in chopped cilantro. (Eggs can be made 1 hour ahead; keep warm covered.)
Assembly: Lay a tortilla flat. Sprinkle a thin layer of grated Manchego over half the tortilla. Add a layer of diced chorizo. Add a layer of scrambled eggs. Add another sprinkle of Manchego. Fold the tortilla in half to enclose the filling.
Heat a dry skillet or griddle over medium heat. Cook each quesadilla for 2–3 minutes per side until the tortilla is golden and crisp and the Manchego is fully melted. Transfer to a cutting board.
Cut each quesadilla into 4 triangles. Arrange on a serving platter. Spoon a small dollop of salsa verde on each triangle. Garnish with a cilantro leaf. Serve with lime wedges.
The Mimosa Pairing Logic: The chorizo's smoky paprika and the Manchego's nutty richness call for a mimosa with bright acidity to cut through and refresh the palate. A classic orange mimosa or a spicy jalapeño mimosa is particularly beautiful — the citrus directly mirrors the lime in the salsa verde, while the chorizo's heat makes each sip taste cleaner and more refreshing. A grapefruit rosemary mimosa is equally excellent — the grapefruit's bitterness balances the chorizo's smokiness.

Make-Ahead: Salsa verde (3 days, refrigerated); chorizo can be diced 2 days ahead; Manchego can be grated 1 day ahead. Scrambled eggs should be made close to service. Quesadillas can be assembled (un-cooked) up to 2 hours ahead; cook just before serving.
Pro Tips: The eggs should be cooked very gently — medium-low heat and constant stirring produces soft, creamy curds rather than rubbery ones. The Manchego should be at room temperature for faster, more even melting. Cook quesadillas in a dry skillet — no oil or butter is needed, and added fat makes the tortilla greasy rather than crisp.
