Belgian Waffle Bar with Toppings

Belgian Waffle Bar with Toppings

May 21, 2026

A waffle bar is perhaps the most reliable format for generating actual joy at a brunch table. There's something about the smell of fresh waffles and an array of toppings that brings out the best in people. It scales from intimate to large group effortlessly, and the setup — toppings in bowls, batter in the fridge, iron on the counter — means most of the work is done before anyone arrives.

The crispy exterior / airy interior result most people want comes from one step: beating the egg whites separately and folding them in at the end. It takes five extra minutes and makes a significant difference in texture.

Ingredients (makes 8 Belgian waffles): - 2 cups all-purpose flour - 2 tablespoons sugar - 1 tablespoon baking powder - ½ teaspoon salt - 2 large eggs, separated - 1¾ cups whole milk - ½ cup unsalted butter, melted - 1 teaspoon vanilla extract

Topping Bar: - Fresh strawberries, blueberries, bananas - Whipped cream (fresh-whipped, always) - Warm maple syrup, fruit compote, chocolate sauce - Candied pecans or walnuts - Lemon curd, Nutella, peanut butter - Powdered sugar for dusting

Instructions: Whisk flour, sugar, baking powder, and salt. Mix egg yolks, milk, melted butter, and vanilla. Combine wet into dry. Beat egg whites to stiff peaks and fold into batter in two additions.

Cook in a well-greased Belgian waffle iron until golden and crisp. Serve immediately — waffles go soggy if they wait.

Set out toppings in labeled bowls. Keep fresh waffles coming from the kitchen.

Pro Tips: For a savory waffle option, omit the sugar and vanilla, add sharp cheddar and chives to the batter. Fried chicken on a cheddar chive waffle with honey drizzle is one of the great brunch dishes.
