Baked Brie with Honey, Walnuts & Cranberries

May 18, 2026
Baked brie creates a specific kind of moment at a party. The wheel comes out of the oven, it goes on the table, someone cuts into it, and warm cheese spills out — and within about ninety seconds there's a circle of people around the board. It's theatrical in the best way, and genuinely easy to pull off.
One thing worth knowing: the rind isn't just decoration. It holds the melted cheese together until someone breaks through it. Without the rind intact, it's just a melted puddle. Score the top, sure, but keep the sides and bottom whole.
Ingredients: - 1 whole Brie wheel (14–18 oz), ripe but firm - 3 tablespoons good honey (wildflower or truffle honey if available) - ½ cup walnut halves, lightly toasted - ¼ cup dried cranberries - 2 sprigs fresh thyme - Crackers, sliced baguette, apple slices, and grapes for serving
Instructions: Preheat oven to 350°F. Place Brie on a small parchment-lined baking sheet or in a small cast iron pan. Score the top rind in a crosshatch pattern. Bake 12–15 minutes until visibly soft when gently pressed.
Meanwhile, warm the honey in a small pan. Add walnuts and cranberries, stir to coat.
Transfer Brie to a serving board. Immediately spoon the warm honey-walnut-cranberry mixture over the top. Garnish with thyme sprigs. Serve with crackers, baguette, apple slices, and grapes arranged around.
Pro Tips: For a savory version, skip the cranberries and add figs, rosemary, and a splash of brandy to the honey. The cheese must be served the moment it comes from the oven — it re-solidifies quickly.
